Low UPF, Healthy and Budget Family Meals Of The Week
What we ate as a family over the last week or so! Generally all of our food shopping is done at Aldi, on a budget, and all trying to be as low ultra processed as possible, cooking from scratch and eating as healthy as possible! As a family we tend to eat high natural fats and veggies, i batch cook for my freezer as much as possible, enjoy! ♥️🥰
Chicken Thigh Curry
Feeds 4-6
4-6 chicken thigh fillets
2-3 tbsp mild curry powder
1 large onion, sliced thinly
3 garlic cloves
1 tbsp freshly grated ginger
1 tin plum tomatoes
2 carrots, washed and grated finely
1 tbsp flaxseed
Double cream stirred through at the end (I add about a small cup)
Olive oil/ghee/salt and pepper
